Salmon is a fabulous choice for a nutritious and delicious meal. You can have it for an everyday dinner or a special occasion. It’s also known for being a good source of omega-3 fatty acids, which have been linked to multiple health benefits.
Chef Lenore Nolan-Ryan shared her recipe for Oven-Baked Herb-Crusted Salmon with Money Talks News founder Stacy Johnson. It’s the perfect combination of flavor with a little kick and so simple to prepare. Check out this video and read on for the recipe.
Great deal for less than 15 bucks! Salmon is one of the most versatile types of fish. Many different spices and preparations compliment this quick and easy protein. Try to buy fresh fillets if you can, and get them on sale. But frozen salmon is cost-effective and super simple to defrost. Chef Lenore recommends using whatever vegetables you have on hand, to tailor the dish to your budget.
Salmon bakes up beautifully in the oven, but keep an eye on it so you don’t overcook it. Test the largest part of the fillet about two minutes before the end of the recommended cooking time. When it’s done, the flesh will flake and the fork will come out cleanly.

4 6 oz. pieces salmon fillet
Salt and black pepper to taste
1 shallot, diced
4 cloves garlic, minced
2 tablespoons fresh dill, chopped
1 tablespoon fresh lemon thyme
1 tablespoon fresh cilantro, chopped small
1 tablespoon lemon zest
1 jalapeno, diced small
3 tablespoons lemon juice
3 tablespoons olive oil
Bring a skillet to a hot temperature and drizzle in 2 tablespoons of olive oil. Sear each salmon fillet on both sides for 1 minute. Place the salmon in the dish and sprinkle with salt and pepper.
In a mixing bowl combine the shallot, garlic, dill, thyme, cilantro, lemon zest, jalapeno, lemon juice, and olive oil. Mix well and cover the fish with the mixture.
Bake for 25 to 30 minutes, at 350 degrees, or until a fork pulls out smoothly from the thickest part of the fillets.
